Five Guys Patty Melt Recipe

 

The recipe video:



 

  • 1. Get yourself some 70:30 ground beef

  • 2. Form into evenly sized meatballs ~120g each and set aside

  • 3. Thinly slice 1x onion and caramelise with some olive oil and butter on med heat for ~30 mins with sea salt, black pepper and 1tsp sugar

  • 4. Then add in a splash of Worcester sauce and a drizzle of balsamic glaze and cook for further 5 mins

  • 5. Lace a pan / griddle with neutral oil and place down a few strips of smoked streaky bacon - cook on med heat till crispy and remove

  • 6. Increase the heat of the pan and once gently smoking, lace with a little more oil then place down your meatballs 1-2 at a time

  • 7. Smash down, then season with sea salt and black pepper and flip after 1.5 mins to get a nicely caramelised patty

  • 8. Once flipped, add your American cheese and allow to melt for another 30 secs/1 min, then set aside

  • 9. Burger sauce: 3tbsp ketchup, 4tbsp kewpie Mayo, 1tsp dijon, hot sauce to taste, 1 diced pickle + splash of juice, bunch of chives, sea salt + black pepper - mix

  • 10. Assemble: flip your bottom bun upside down, top with American cheese, burger sauce, beef patties, caramelised onions, sliced pickles, more sauce, crispy bacon and your flipped top bun

  • 11. Carefully toast in a pan with sizzling butter on med heat till golden and toasted - then using a plate, flip and toast the other side
